SIMPLE SYRUP
Simple syrup is , not surprisingly, easy to make. I use it mostly when making cocktails, but you can also use it to sweeten iced tea or coffee, lemonade, under-ripe fruit, etc.
Variations:
Black Pepper Simple Syrup: Add 6 or 7 whole black peppercorns to the pan along with the sugar and water. Remove them before using.
Ginger Simple Syrup: Add two slices of fresh ginger root to the pan along with the sugar and water. Remove them before using.
Brown Sugar Simple Syrup: Substitute brown sugar for the white sugar for a more robustly flavored syrup. It works especially well with whiskey and rum-based cocktails.
Ingredients
1 cup granulated sugar
1 cup water
METHOD
1. Place ingredients in a pot.
2. Bring to boil and cook for 5 minutes.
3. Let cool, then place in clean jar or bottle.
4. Keep in the fridge indefinitely.
