2 boneless, skinless chicken breasts
2 egg whites
1 cup parmesan cheese, grated
¼ teaspoon black pepper
2 tablespoons olive oil
Equipment
A non-stick frying pan
1.Slice chicken breasts in half parallel to the cutting board.
2.Combine cheese and pepper on a plate.
3.Dip chicken breasts into egg white and then into cheese/pepper mixture.
4.Heat oil in a pan over medium-high heat.
5. Add chicken and cook for 1 to 2 minutes on each side, until golden and cooked through.
