RED WINE GASTRIQUE

This is a variation of sorts on sugar syrup.  Use it to make the Resurrection.  You can also add it to your salad dressings or drizzle it on roasted vegetables or mozzarella.  It’s also good added to seltzer water or tonic water for a refreshing (almost non-alcoholic--some alcohol won’t cook off from the wine) spritzer.

Ingredients

½ cup granulated sugar

¼ cup water

½ cup red wine

1½ teaspoons balsamic vinegar

METHOD

  1. 1.Combine sugar and water in a small pot and bring to a boil, cooking for 5 minutes.

  2. 2.In another pan, bring wine and vinegar to the boil and cook for 3 or 4 minutes.

  3. 3.Combine sugar syrup and wine mixture.

  4. 4.Let cool, then place in a clean jar or bottle in the fridge.
