I looked at my bar the other day and noticed that a few bottles had a light layer of dust covering them; the sign of disuse. This drink is an attempt to remedy that. Think of it as a delicious, alcoholic feather duster. Maraschino liqueur is, admittedly, a little tough to find. But it’s worth the effort. You can also rim the glasses with a mixture of sugar and freshly ground black pepper for some added pizzaz.
the AMBER SPYGLASS
1. Pour all ingredients into cocktail shaker.
2. Fill with ice cubes.
3. Shake for 20 seconds.
4. Strain into chilled martini glasses.
5. Garnish with cherries, if using, and serve.
yields 2 drinks
4 oz. gin
2 oz. freshly squeezed lemon juice
1 oz. maraschino liqueur
1 oz. sweet vermouth
1 tbsp. black pepper simple syrup
2 cherries, fresh or maraschino (optional)
